Part of our continuing quest for a more sustainable homestead is adding chickens to our family. Our family recently swelled to a record 53 members now that we have 50 chickens! We purchased some additional chicks this year to add to our other 8 working ladies; other chicks were gifted to us and raised by their mom as shown here. What a difference there is in the chicks raised under a lamp and those who had the warmth, protection and instruction of a parent! Nature sure does know what its doing. However, for the time being we have chosen to keep a rooster free coop.

We may have a couple of boys that have sneaked in the mix, but we’ll know in a few months for sure. These men will be culled for the stock pot and the oven. But rest assured they will be honored and valued for their life and medicine. They will find their way into our Super Immune Stocks we brew with a myriad of wild harvested medicinal mushrooms and herbs. We break the bones and add raw cider vinegars and herbs to extract the most mineral and calcium content possible. We then slow simmer the stock for a minimum of 4 and often up to 24 hours to extract all the polysaccharides and other vital medicines from the bones and mushrooms. I am going to be selling this stock at the farmer’s markets here in CA this summer. I often freeze the stock in ice cube trays so I can throw a couple cubes in any grain., soup or stew I am making. Alternatively, I just freeze a whole quart and defrost one a week to use as needed. A little goes a long way! This is preventative medicine as well as something that is great in acute conditions; better to use before you are sick, but will nourish you back to health just the same.
