A brew with a myriad of wild harvested medicinal mushrooms and herbs. We break the bones and add raw cider vinegars and herbs to extract the most mineral and calcium content possible. We then slow simmer the stock for a minimum of 4 and often up to 24 hours to extract all the polysaccharides and other vital medicines from the bones and mushrooms. I am going to be selling this stock at the farmer’s markets here in CA this summer. I often freeze the stock in ice cube trays so I can throw a couple cubes in any grain., soup or stew I am making. Alternatively, I just freeze a whole quart and defrost one a week to use as needed. A little goes a long way! This is preventative medicine as well as something that is great in acute conditions; better to use before you are sick, but will nourish you back to health just the same.
